Where it comes from
Naan comes from the Persian word for bread. It arrived in India with Central Asian and Persian cooks and became a royal bread of the Mughal court before spreading to every Indian restaurant in the world.
Kulcha is Punjab's leavened tandoor bread; Amritsari kulcha, stuffed and crisp, is the pride of Amritsar.
