Kulcha is the soft, leavened bread of Amritsar, usually stuffed with potato or onion. Ours is filled with green raw mango for a sweet-sour surprise in every bite.

It's baked against the wall of the tandoor until blistered and golden, then served with a creamy walnut-yogurt dip. A bread worth ordering on its own.
