Thin sheets of marinated paneer are rolled around a spiced paneer scramble and Amul cheese, then cooked until the outside turns crisp and golden.
They arrive with pineapple chutney for dipping: sweet, tangy and bright against the rich, cheesy filling. A vegetarian starter made in our kitchen and served only at The Treasury.
Where it comes from
Cigar rolls belong to India's modern party-starter tradition, where cooks borrowed the slim, crisp shape of a spring roll and filled it with Indian flavors. Paneer versions now appear at weddings and parties from Delhi to Dubai.
Ours is our own recipe: rolled from marinated paneer sheets rather than pastry, filled with paneer scramble and Amul cheese, and served with pineapple chutney.
