Beetroot is spiced, shaped into a tikki and cooked until crisp outside and tender within.
Goat cheese adds a creamy, tangy contrast to the earthy sweetness of the beet. A vegetarian starter that's as striking on the plate as it is to eat.
Where it comes from
Tikki, a pan-crisped patty, is one of North India's best-loved street snacks; aloo tikki is sold from street carts in nearly every Indian city.
Our chef reimagined it with beetroot for color and sweetness and added goat cheese, a pairing you won't find at a street stall.
