Sham savera means "dusk and dawn": a dark green spinach shell around a snow-white paneer center, like night and day on one plate. It's one of the most beautiful dishes of North Indian vegetarian cooking.
Our kofta are made by hand, gently fried, then halved and set in a buttery tomato and cashew gravy so you see the contrast with every serving. Rich, creamy and completely vegetarian.
